So this is definitely a blog first for me. I have been reading Kelly's Korner Blog for quite some time...long before I started blogging myself. I don't know her personally, but like many of her readers, followed her journey as her little girl Harper spent some time in the NICU after she was born. Every week Kelly hosts a "Show Us Your Life Blog Hop" and asks her readers to participate. I am normally too intimidated to participate...lame, huh? This week the theme is dinner recipes. Everyone cooks dinner, right? So we are all looking for good recipes. I decided this was a good time to join the band wagon and participate! Here is one of my favorite recipes that allows you to make spaghetti a little differently and is so yummy! It's called Dream Spaghetti...can we say comfort food?
8 ounces of spaghetti
3 cups spaghetti sauce
1 lb. ground beef
8 ounces small curd cottage cheese
4 ounces sour cream
1-2 cups mozzarella cheese
Heat oven to 350 degrees. Cook spaghetti noodles. Brown meat. Drain. Combine the sauce and cooked meat. Mix the cottage cheese and sour cream in a small bowl. Layer the bottom of a 9x13 pan with noodles. Spread the cottage cheese/sour cream mixture over the noodles. Top with meat mixture. Sprinkle mozzarella cheese on top. (Sometimes I sprinkle a little on the bottom of the pan before adding the noodles) Bake for 30 minutes at 350 degrees. Enjoy!
It is so good & freezes so easily. Since spaghetti usually comes in 16 ounce packages, it is convenient to make one pan to eat for dinner and one to freeze for the nights when you really don't feel like cooking!

Only time will tell...of course it is HIGHLY unlikely that I will be participating next Friday considering we will have a 1 day old little miracle girl that we will be a little preoccupied with! Every time I think about the fact that this time next week I will be a mommy, my heart melts!
